Baking: Plum and Marzipan Muffins

Ingredients
 

  • 100 g Flour type 550
  • 50 g Ground almonds
  • 100 g Sugar
  • 2 Free range eggs
  • 100 g Marzipan paste
  • 80 g Safflower oil
  • 100 ml Milk
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 10 Plums, fresh
  • Powdered sugar

Instructions
 

  • Grate the marzipan mixture. Combine with flour, almonds, sugar, eggs, salt, oil, milk and baking powder to make a fairly runny batter.
  • Line a muffin tin with paper liners and distribute the batter evenly on top.
  • Core the plums and cut into small pieces. Spread these on the dough
  • Bake the muffins at 180 degrees top / bottom heat in the preheated oven for about 25 minutes. After cooling, sprinkle with powdered sugar.
  • I baked the mufffins in a silicone mold this time. Wasn't exactly a hit. They didn't come out very well. They still tasted good, even for those who don't like marzipan and largely forego fruit. ;-O
