Baking: Strawberry Slices for Figure-conscious

the sponge dough

  • 4 piece Eggs separated
  • 100 g Sugar
  • 3 tablespoon Lukewarm water
  • 30 g Food starch
  • 70 g Flour type 550
  • 1 pinch Salt
  • 2 teaspoon Baking powder

the layers in between

  • 4 tablespoon Strawberry jam light

first layer

  • 500 g Fresh strawberries
  • 2 tablespoon Stevia powder
  • 8 sheet Gelatin white

second layer

  • 500 g Fresh strawberries
  • 1 kilogram Lowfat quark
  • 3 tablespoon Stevia powder
  • 2 tablespoon Lemon juice
  • 8 sheet Gelatin white

Decoration

  • 6 piece Strawberries with green
  • 12 piece Mint leaves, fresh
  • 12 piece Chocolate ornaments – just for the eye 😉

the biscuit

  1. Beat egg whites into very stiff snow.
  2. Using a hand mixer, beat the egg yolk, sugar and water into a thick cream. (Takes about 3 – 5 minutes.
  3. Now add the flour mixed with baking powder and salt to the cream and carefully fold into the dough together with the egg white using a slotted spoon.
  4. Put this mixture on a tray lined with foil or paper, spread it evenly and bake at 150 degrees for 20 minutes until the sponge cake begins to get color. (Chopstick sample)
  5. After removing the base, turn it over onto a sugar-sprinkled kitchen towel, peel off the foil (in the case of paper, rub it off with a damp cloth first) and let it cool down.
  6. Then cut in half and spread a thin layer of strawberry jam on both parts.
  7. Place one half in a rectangular cake frame.

the first layer

  1. Let the gelatine soak in a little cold water, squeeze out and dissolve at low temperature.
  2. Clean and puree 9,500 g strawberries. Sweeten the puree with stevia and add to the dissolved gelatine. Let it set in the refrigerator for about 20 minutes. Then distribute on the first shelf.
  3. Place the second half of the base on top with the jam side up.

the second layer

  1. Put 6 of the remaining strawberries back with the greenery, clean the rest, cut in half and cover the base with them.
  2. Soak gelatine again, allow to swell and dissolve.
  3. Mix the quark with stevia, lemon juice and the dissolved gelatine well and pour over the strawberries. Gently shake the mold so that the surface is completely smooth.
  4. Cool for approx. 2 hours to set.
  5. Now mark twelve pieces and decorate each piece with half a strawberry, a mint leaf and a chocolate ornament.
