Baking: Tyrolean Wedding Cake

- 200 g Butter
- 250 g Powdered sugar
- 6 piece Eggs separated
- 1 pinch Salt
- 1 teaspoon Ground cinnamon
- 200 g Ground almonds
- 125 g Flour type 550
- 100 g Milk chocolate
- 1 teaspoon Baking powder
- Mix the butter with the egg yolk and half of the powdered sugar until frothy.
- Beat the egg whites until stiff and pour in the second half of the powdered sugar. Continue beating until you have a firm, shiny mass.
- Now add salt, cinnamon, flour, baking powder and almonds to the egg cream. Mix well.
- Carefully and evenly fold the egg whites into the dough using a slotted spoon.
- Chop the chocolate and finally mix it into the batter.
- Grease a springform pan very generously (!) (Otherwise the form won’t make the cake) and crumble it.
- Bake the cake in the preheated oven at approx. 190 degrees for one hour. (Stick sample). After cooling, either sprinkle with powdered sugar or cover with a chocolate icing.
