Ingredients for 5 servings:

  • 35 g butter, melted
  • 3 egg yolks
  • 2 cl rum
  • 250 g flour
  • 30 g sour cream
  • 2 cl milk
  • 15 g powdered sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 kg apples, sour
  • Cinnamon and sugar
  • lemon juice
  • Fat for frying
  • Powdered sugar for dusting

Working time approx. 45 minutes; Total time approx. 45 minutes

makes about 10 cakes

Mix the melted butter with milk, powdered sugar, rum, and sour cream. Knead with the egg yolks, flour, salt, and vanilla sugar until smooth. Let the dough rest for about 10 minutes. For the filling, grate the apples and season with cinnamon, sugar, and lemon juice. Roll out the dough thinly and cut out discs using a cutter (approx. 15 cm in diameter). Place 2 tablespoons of apple filling on each disc of dough, brush the edges with water, and cover with a second disc. Then trim the edges with a pastry wheel or press down with a fork. Bake the balasses in hot oil until golden brown. Sprinkle with powdered sugar. Vanilla sauce goes very well with this.
