For the broth:

  • 1 tbsp Kecap Tim Ikan (see attachment)
  • 1 tbsp Sesame oil, light
  • 2 tbsp Sunflower oil
  • 500 g Marrow bones, beef
  • 1 small Leek
  • 1 small Carrot
  • 1 Pc. Celery bulb
  • 10 g Turmeric root, fresh or frozen, (alternatively 1 teaspoon turmeric powder)
  • 2 small Chillies, green, fresh or frozen
  • 2 Kaffir lime leaves, fresh or frozen
  • 500 g Water
  • 10 g Beef broth, Kraft bouillon
  • 1 tbsp Oyster sauce, (Saus Tiram)

For the vegetables:

  • 1 medium-sized Clove of garlic, fresh
  • 1 small Carrot
  • 3 tbsp Cut celery stalks, fresh or frozen
  • 2 Tomatoes, red, fully ripe
  • 1 small Spring onion, fresh

To garnish:

  • 2 tbsp Celery leaves, fresh or frozen
  • 2 Pinches Sesame seeds, white
  1. Rinse the fleshy bones well, in plenty of water so that they are all covered, and cook for 5 minutes in a casserole with a lid.
  2. In the meantime, wash, clean, peel and cut the vegetables for the broth. Wash the chillies and kaffir lime leaves and use them whole.
  3. Discard the cooking water, rinse the bones again, clean the pot, add the water, the bones, the prepared vegetables, the beef broth and the oyster sauce and simmer for 120 minutes.
  4. In the meantime, cut the fresh or thawed beef fillet across the fibers into approx. 6 mm thick slices. Chop the slices into 2 x 3 cm pieces and marinate with Kecap Tim Ikan and sesame oil. Clean the vegetables for the insert and chop them bite-sized, special: squeeze the garlic, peel, quarter and core the tomatoes. Cut the fresh, defoliated celery stalks crosswise into approx. 3 mm wide rolls.
  5. Strain the broth and return it to the saucepan. Separate lean meat from the bones and add to the broth. Add the prepared vegetables and simmer for 8 minutes.
  6. Heat the sunflower oil in a pan, add the strained pieces of meat and stir-fry until their color changes. Transfer to the prepared serving bowls. Add the soup, garnish and serve warm.
