Balkan Rice
The perfect balkan rice recipe with a picture and simple step-by-step instructions.
- 1 Diced onion
- 2 Garlic cloves chopped
- 2 tablespoon Extra virgin olive oil
- 120 g Rice parboiled
- 0,5 Can Chunky tomatoes
- 1 Red pepper, diced
- 100 ml Chicken broth
- 0,5 teaspoon Hot pepper
- 1 teaspoon Sweet paprika
- 1 Cup Green frozen peas
- 2 teaspoon Finely chopped parsley
- Heat the oil in a saucepan and fry the onion cubes until translucent. Sauté the chopped garlic for 30 seconds, then add the rice and stir-fry until it is “glassy” too.
- Deglaze with the chunky tomatoes and chicken broth, stir in the diced paprika and both kinds of hot and sweet paprika and cover the rice dish over a mild heat for about 20 minutes; Stir every now and then so that nothing sticks and, if necessary, add a little more stock or water.
- Then take the pan off the heat, fold in the peas with the parsley and cover with the rice for another 5 minutes. Then season to taste and serve.
- Go with it … well, what? Balkan-style cevapcici and a few raw onion cubes.
