Balkan Rice

The perfect balkan rice recipe with a picture and simple step-by-step instructions.

  • 1 Diced onion
  • 2 Garlic cloves chopped
  • 2 tablespoon Extra virgin olive oil
  • 120 g Rice parboiled
  • 0,5 Can Chunky tomatoes
  • 1 Red pepper, diced
  • 100 ml Chicken broth
  • 0,5 teaspoon Hot pepper
  • 1 teaspoon Sweet paprika
  • 1 Cup Green frozen peas
  • 2 teaspoon Finely chopped parsley
  1. Heat the oil in a saucepan and fry the onion cubes until translucent. Sauté the chopped garlic for 30 seconds, then add the rice and stir-fry until it is “glassy” too.
  2. Deglaze with the chunky tomatoes and chicken broth, stir in the diced paprika and both kinds of hot and sweet paprika and cover the rice dish over a mild heat for about 20 minutes; Stir every now and then so that nothing sticks and, if necessary, add a little more stock or water.
  3. Then take the pan off the heat, fold in the peas with the parsley and cover with the rice for another 5 minutes. Then season to taste and serve.
  4. Go with it … well, what? Balkan-style cevapcici and a few raw onion cubes.
