Balsamic vinaigrette

Ingredients for 2 servings:

  • 1 m.-sized tomato(s)
  • ½ cucumber(s)
  • 1 m.-sized onion(s)
  • Balsamic vinegar
  • olive oil
  • Salt and pepper, freshly ground
  • Sugar
  • some mustard, medium hot

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with salad, but also absolutely amazing with asparagus

Wash, deseed, and coarsely chop the tomato. Peel, deseed, and roughly chop a cucumber. Peel and roughly chop the onion. Place everything in a tall, narrow bowl and finely chop with a hand blender. Season with salt, pepper, and sugar. Add a small dash of olive oil and enough balsamic vinegar to give the sauce a pleasant sweet and sour flavor. Carefully season with mustard; the mustard should barely be noticeable. Vigorously puree the vinaigrette again with a hand blender and whip.
