Banana and persimmon jam

Ingredients for 1 servings:

  • 2 large bananas
  • 4 persimmons
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • 300 g gelling sugar, made from Stevia
  • 250 ml orange juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

Peel the persimmons and cut into small cubes. Peel and finely chop the bananas. The amount after peeling should be about 900g. Place the fruit in a saucepan with the lemon juice, orange juice, and cinnamon and puree. Then add the gelling sugar. Bring the mixture to a boil and continue to cook for about 4 minutes, stirring continuously. Pour the jam into jars and screw on the lids tightly. Let the jars rest upside down for about 15 minutes. This amount yielded three medium-sized jars of jam.
