Ingredients for 1 servings:

  • 300 g flour
  • 180 g corn semolina, fine
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • 3 large bananas, or 4 small, ripe (leopard look)
  • 100 g honey
  • 250 ml buttermilk
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine flour, cornmeal, baking powder, and cinnamon. Preheat oven to 170 degrees Celsius (350 degrees Fahrenheit). Mash the bananas, add them to the flour mixture along with honey and buttermilk, and stir (preferably with a wooden spoon) until you have a moist, yet not too runny, batter. Pour into a greased loaf pan and bake for 80 minutes. Tastes delicious topped with butter or quark and honey.
