Ingredients for 1 servings:
- 250 g flour, sifted
- 1 tsp baking soda
- 1 pinch of salt
- 115 g butter, soft
- 100 g brown sugar
- 2 eggs, beaten
- 525 g banana(s), very ripe, mashed
- Fat for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Combine dry ingredients except sugar. Cream together butter and sugar until creamy. Beat in eggs one at a time, followed by the mashed bananas. Add the mixture to the flour mixture. Stir until just moistened. Pour batter into a greased loaf pan. Bake in a preheated oven at 175°C (top/bottom heat) for approximately 60-70 minutes.
