Ingredients for 1 servings:

  • 450 g banana(s), ripe, peeled, weighed
  • 2 tbsp lemon juice
  • 1 tsp vanilla paste or 0.5 tsp vanilla powder
  • 1 pinch of salt
  • 1 pinch of clove powder
  • 150 g sugar, brown or white
  • 2 eggs
  • 120 g butter, soft
  • 300 g flour
  • 1 tsp, heaped baking powder
  • Butter and flour for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 40 minutes

Preheat the oven to 180 degrees Celsius. Grease a 25 cm cake tin with butter, dust with flour, and chill. Roughly chop the bananas and place them in a bowl. Add the lemon juice, vanilla paste, salt, and clove powder, and mash the banana pieces with a fork until smooth. In a second bowl, beat the sugar and eggs for 3 minutes. Then add the butter and beat for another 2 minutes. Stir the banana puree into the egg and butter mixture. Sift the flour with the baking powder and fold in with a spatula. Pour the batter into the prepared cake tin. Bake the banana bread on the middle rack at 180 degrees Celsius for about 75 minutes. Then let it stand in the tin for 10 minutes, turn it out, and let it cool on a wire rack.
