Ingredients for 4 servings:
- 6 Vienna sausages, sliced
- 5 m.-sized carrot(s), cut into sticks or slices
- 4 Roma tomatoes, roughly diced
- 1 large onion(s), cut into wedges
- 2 bell peppers, red and green, roughly diced
- 1 tbsp tomato paste
- 1 tsp vegetable broth, instant
- 1 cup water
- 1 chili pepper(s), whole or chopped
- salt and pepper
- Oil or margarine

Briefly fry the sausages in oil or margarine and remove from the pan. Sauté the onion wedges in the frying fat. Add the carrots, bell peppers, tomatoes, and chili and fry briefly. I always add the chili pepper whole and remove it when everything is ready. Add the tomato paste, fry briefly, and deglaze with water. Add the stock and simmer for 8-10 minutes. When the vegetables are cooked but still firm to the bite, add the sausages again and heat briefly. Season with salt and pepper. This goes wonderfully with mashed potatoes or rice.
