Banana chocolate muffins

Ingredients for 1 servings:

  • 12 dates, dried, pitted
  • e.g. water, boiling
  • 115 g butter, soft
  • 1 egg(s)
  • 5 banana(s), very ripe, preferably brown
  • 200 g dark chocolate (chocolate drops)
  • 1 tsp, heaped cinnamon powder
  • 250 g spelt flour (type 1050)
  • 2 tsp cream of tartar baking powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

(Almost) sugar-free and white-flour-free, for using up brown bananas. Makes 12 bananas.

Finely chop the dates and place them in a small cup. Pour just enough boiling water over them to cover the dates. Peel and puree the bananas. Beat the butter and egg until fluffy and stir into the banana mixture along with the dates. Stir in the flour, cinnamon, and baking powder, and finally fold in the chocolate chips. Pour the mixture into twelve muffin cups and bake at 160°C (convection oven) for 30 minutes.
