Ingredients for 1 servings:

  • 2 lemons, untreated
  • 1 kg banana(s), weighed with peel (approx. 6 m.-sized bananas)
  • 700 g sugar
  • 250 ml water, approx.
  • 1 vanilla pod(s)
  • 2 cl rum

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Grate the lemon zest and squeeze out the juice. Cover the zest with water just enough and boil for 10 minutes. Pour lemon juice and lemon water over the peeled and sliced ​​bananas. Make a syrup from the sugar and about 250 ml water. When large bubbles form on the surface, add the bananas and the slit vanilla pod. Simmer for about 20 minutes, then add the rum. Remove the vanilla pod and pour the jam into clean jars, sealing them immediately. If children are eating the jam, replace the rum with unsweetened, tart apple juice.
