Strawberry-cherry jam with dark chocolate

Ingredients for 1 servings:

  • 375 g strawberries, prepared and weighed
  • 375 g cherry(s), pitted weighed
  • 50 g dark chocolate
  • ½ vanilla pod(s)
  • ½ lemon(s)
  • 250 g gelling sugar 3:1

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Wash and drain the strawberries and cherries. Pit the cherries and remove the stems. Break the dark chocolate into large pieces. Squeeze the lemon juice. Place the prepared fruit in a tall saucepan with the gelling sugar and lemon juice. Split the vanilla pod lengthwise and add the seeds and the hollowed-out vanilla pod to the pan. Let the mixture stand until some of the fruit juice begins to run. Now puree the mixture with a hand blender until it reaches the desired consistency. Now add the dark chocolate. Bring the jam mixture to a boil, stirring constantly according to the package instructions for the gelling sugar. At the end of the cooking process, test the setting. If the jam is still too runny, boil for another 1–2 minutes. Pour the hot jam into clean, hot-rinsed screw-top jars.
