Banana jam with currants

Ingredients for 1 servings:

  • 1 kg banana(s), ripe
  • 200 g currants
  • 5 tsp lemon juice
  • 1 pack of gelling sugar 3:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel 1 kg of ripe bananas (the skin should already have brown speckles) and mash them in a saucepan with a potato ricer. Stir in the gelling sugar over low heat until dissolved. Season with lemon juice. Wash the currants and add them. I like to use more; I like the tartness of the sweetness. Bring to a boil briefly. Then pour into jars and cover to cool.
