Ingredients for 4 servings:

  • 2 bananas
  • 250 ml milk
  • 4 eggs
  • 160 g flour
  • 60 g butter
  • 3 tbsp rum
  • Salt
  • Oil for frying
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine the milk, butter, rum, and a very small amount of salt, and bring to a boil. Stir in the flour, stirring constantly. Stir the mixture over low heat until it starts to come away from the bottom of the bowl. Pour the batter into a bowl and let it cool. Gradually stir in the eggs. Peel the bananas, cut them into 1/2-cm cubes, and mix them into the batter. Heat oil in a large pan. Using a spoon, scoop out even-sized doughnuts from the batter and fry them in the hot oil over medium heat until golden brown. Remove the doughnuts and drain well. Arrange on plates and serve sprinkled with powdered sugar.
