Banana – Marzipan – Jam

Ingredients for 1 servings:

  • 500 g banana(s)
  • 250 g gelling sugar (2:1 or 3:1)
  • 100 g marzipan paste
  • some lemon juice, freshly squeezed (a few dashes)

It’s best to use overripe bananas, as they already have a certain sweetness of their own. Chop the bananas either by hand or with a food processor. Do the same for the marzipan mixture. Stir in the lemon juice and add the gelling sugar to the saucepan. Stir the mixture thoroughly before switching on the heat. Bring to a boil and simmer for 3-4 minutes. Then pour into the prepared jars. I used a 2:1 gelling sugar ratio. If that’s too sweet for you in combination with the marzipan, you can also use a 3:1 ratio, but the sugar content will change (check the package instructions).
