Banana muffins for toddlers

Ingredients for 1 servings:

  • 250 g wholemeal spelt flour
  • 3 tsp baking powder
  • 250 g banana(s)
  • 2 eggs
  • 80 g oil
  • 250 g coconut milk
  • 2 small bananas

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sweetened only with bananas. Makes 12 pieces.

Makes 12 muffins. Mix the flour with the baking powder. Mash 250g of bananas with a fork and fold in with the remaining ingredients. Fill half of the batter into the holes of a muffin tin. Cut the two small bananas into pieces, place a piece of banana in the center of each, and cover with the remaining batter. Bake at 180°C (top/bottom heat) for 30 minutes. (Do the skewer test!). The muffins are intentionally not very sweet; I baked them for my daughter’s 1st birthday. If you like, you can of course add more sugar, cinnamon, chocolate, etc. to the batter, or dust the muffins with powdered sugar, cover them with chocolate, or something similar.
