Banana muffins with chocolate

Ingredients for 1 servings:

  • 260 g flour
  • 150 g sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon powder
  • 1 large egg(s)
  • 125 ml oil, neutral
  • 130 g natural yogurt
  • 1 tsp vanilla extract
  • 2 bananas, ripe
  • 150 g dark chocolate, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C (top/bottom heat). Line a muffin tin with paper baking cups and chop the chocolate. In a bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon and set aside. Whisk together the egg, oil, yogurt, and vanilla extract. Peel the bananas, mash them with a fork, and stir them into the egg mixture. Add the flour mixture and mix briefly. Fold in the chopped chocolate and then fill the prepared muffin tin, 2/3 full. Bake the muffins in the preheated oven for 20-25 minutes, until golden brown. Remove the muffins, let them stand briefly in the tin, and then cool completely on a wire rack. The batter yields 12-13.
