Banana Nut Muffins

Ingredients for 1 servings:

  • 150 g whole wheat flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 60 g sugar, brown, fine
  • 125 g nuts, roughly chopped
  • 2 bananas, ripe, mashed
  • 5 tbsp milk
  • 2 tbsp oil
  • 1 large egg(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

makes about 8 pieces

Preheat the oven to 190°C (fan oven). Mix the flour with the baking powder and salt. Then add the sugar and nuts. In a second bowl, mix the mashed bananas with the milk, egg, and oil. Fold in the flour mixture. Divide among 8 muffin cups and bake for 20-25 minutes. It’s super easy, and you don’t need a mixer!
