Banana pancakes

Ingredients for 1 servings:

  • 4 eggs
  • 2 m.-sized banana(s)
  • 1 tsp honey
  • 1 tsp cinnamon powder
  • 30 g oat flakes, fine or melt-in-the-mouth
  • 30 g protein powder, if necessary
  • 1 pinch(s) salt
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Roughly chop the bananas and mash them in a bowl, e.g., with a fork. Add the eggs, honey, cinnamon, oats, protein powder (if desired), and a pinch of salt to the bananas and mix until smooth. I use a hand blender, but a food processor will also work, of course. You can also mix the batter by hand until smooth. Heat a little oil in a pan. Drop the batter into the pan, spoonful by spoonful, and cook over medium heat until golden brown. When the first side is golden brown, flip and cook the other side until golden brown. Makes about three medium-sized pancakes. Also great as a fitness breakfast—the batter can be prepared in the evening and quickly baked in the morning.
