Banana Pudding

Ingredients for 6 servings:

  • 60 g butter
  • 50 g brown sugar
  • ¼ tsp cinnamon powder
  • 5 bananas (no longer green)
  • 500 ml milk
  • 120 ml whipped cream
  • 100 g sugar
  • 1 pinch of salt
  • 5 egg yolks
  • 45 g cornstarch
  • 3 tsp vanilla extract
  • 1 package of butter biscuits
  • 250 ml whipped cream
  • 2 packs of cream stiffener

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

First, melt the butter with brown sugar and cinnamon in a pan. Then, slice the bananas and add them. Caramelize over medium heat for about 3-4 minutes, then remove from the heat. Next, bring the milk, cream, sugar, and vanilla to a boil. Whisk the egg yolks with the cornstarch and a pinch of salt until frothy and stir into the milk and cream mixture over medium heat. Then cook for about 4 minutes until a pudding forms. Spread the cookies on the bottom of a baking dish, add half of the caramelized bananas, cover with half of the pudding, and repeat with the remaining ingredients. Refrigerate for at least 5 hours.
