Ingredients for 1 servings:

  • 100 g wheat flour type 405
  • 90 g wholemeal flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp cinnamon powder
  • 1 egg(s)
  • 120 g raw cane sugar
  • 160 ml buttermilk
  • 80 ml oil, neutral
  • 100 g Choco Chunks or chocolate drops for baking
  • 3 bananas, very ripe

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 40 minutes

In a small bowl, combine flours, baking powder, baking soda, cinnamon, and chocolate chips. In a large bowl, whisk together sugar, egg, oil, and buttermilk. Fold in dry ingredients. Peel bananas and mash with a fork. Fold banana mash into the batter. Place 12 muffin cups in the wells of a muffin tin and fill two-thirds full with batter. Place in an oven preheated to 160°C (320°F) and bake for 20 minutes. Let cool before eating, as warm muffins will stick to the paper cups.
