Bananas in wine batter

Ingredients for 4 servings:

  • 4 large firm bananas
  • 300 g flour
  • 3 eggs
  • 250 ml white wine (or milk)
  • 3 tbsp oil, tasteless
  • 50 g sugar
  • 1 pinch of salt
  • Fat, for frying
  • Lemon(s), rum (or similar)
  • Flour

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the bananas, cut them into thirds, and toss with lemon and rum. Separate the eggs. Make a smooth batter from the sifted flour, egg yolks, sugar, wine, salt, and oil. Beat the egg whites until stiff and fold into the batter. Coat the bananas in flour and carefully fold them into the batter. Heat a pan with fat (fat is good when you dip a wooden spoon into it and see bubbles). Fry the banana thirds until golden brown. Serve immediately and hot. Tip: Serve with vanilla ice cream or chocolate sauce and whipped cream.
