Bananas – Quark – Schmarrn

Ingredients for 2 servings:

  • 150 g flour
  • 300 ml milk
  • 3 tbsp sugar
  • 2 tbsp curd
  • 2 eggs
  • 2 bananas, ripe, or more
  • 3 tbsp oil
  • Powdered sugar or vanilla ice cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Banana utilization

In a bowl, whisk or use a hand mixer to combine the flour and milk. Stir in the sugar and quark, then beat in the eggs. Heat the oil in a pan and pour in the batter. Peel and slice the bananas, then place them on top of or in the liquid. It’s best to cover the pan and bake for a few minutes at low to medium heat. Check occasionally with a spatula to make sure the underside isn’t getting too brown. Using two spatulas, halve or quarter the batter and flip it over. When it’s fairly firm, tear it into pieces with the spatulas. Dust with powdered sugar or serve with vanilla ice cream.
