Vegan fruit pancakes

Ingredients for 1 servings:

  • 100 ml soy milk (soy drink)
  • 50 g whole wheat flour
  • 15 g agave syrup
  • ¼ tsp vanilla powder
  • 1 pinch of sea salt
  • some cinnamon powder
  • 1 tbsp puffed amaranth
  • some walnut oil
  • 2 tbsp soy yogurt (yogurt alternative), unsweetened
  • 2 tsp agave syrup
  • 1 pinch of vanilla powder
  • 1 bowl of fruit of your choice (e.g. 1/2 apple, 1/4 Galia melon, 15 grapes)
  • 1 handful of walnuts

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 10 minutes

Whisk together all ingredients for the batter, except for the amaranth, until smooth. Fold in the amaranth. Dice the fruit, mix well, and set aside. Toast the walnuts in a dry pan over high heat for about 2 minutes and place them in a small bowl. Heat a little walnut oil in the pan. Add the batter and fry for about 5 minutes on both sides until golden brown. Transfer the finished pancake to a plate and top with the fruit. Mix the soy yogurt with the agave syrup and vanilla and pour over the fruit, then top with the walnuts.
