Ingredients for 8 servings:

  • 150 ml soy sauce (Silver Swan soy sauce)
  • 50 ml vinegar (white wine vinegar) with herbs
  • 2 cl brandy
  • 1 onion(s), white
  • 6 cloves garlic, fresh
  • 2 peppers, red
  • 1 tsp, heaped honey
  • e.g. ketchup
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Filipino barbecue marinade

For approximately 2 kilos of finely chopped meat or small skewers. For example, pork roulade or chicken breast. Finely chop the onion, garlic, and chili peppers and mix well with the remaining ingredients. Then stir the ketchup into the marinade until it becomes slightly creamy. Season the marinade with salt and pepper. Marinate the meat and let it marinate for at least 6 hours.
