Halloumi with lemon salsa

Ingredients for 4 servings:

  • 400 g Halloumi (grilled cheese)
  • 2 tbsp olive oil
  • 3 tbsp olive oil
  • 15 olives, black
  • 1 small bunch of parsley, flat
  • 2 lemons, untreated, peel
  • 1 small onion(s), red
  • 2 tsp balsamic vinegar, lighter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Pit the olives and chop them along with the parsley and onion. Grate the zest from the lemons. Mix all ingredients together. Brush the drained halloumi with oil and grill for 3 to 4 minutes on each side until golden brown. Serve with the salsa.
