Barbecue sauce made from tomatoes

Ingredients for 4 servings:

  • 1 ½ kg tomatoes, ripe
  • 750 g onion(s)
  • 500 g apples
  • 500 g sugar
  • 50 g salt
  • 50 g mustard seeds
  • 1 large bay leaf
  • 6 cloves
  • 1 tbsp pepper, white
  • 1 tsp nutmeg
  • ½ tsp paprika powder, hot
  • 1 tsp ginger, grated and dried
  • 750 ml vinegar (Sprite vinegar 10%, from brandy)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Recipe from GDR times

Wash and chop the tomatoes, removing the white stems. Peel and core the apples, then chop them. Peel and chop the onions. Cook all ingredients for 2 hours while stirring, strain through a fine sieve, and fill jars or bottles while still hot. Then boil them for 10 minutes at 100°C. It’s perfect with all kinds of grilled food, especially meat, like steak and sausages.
