- Ingredients:
- 1000 g Percebes
- 70 g Sea salt
- 1 Bay leaf
- Barnacle preparation: Exclusively at Wolfgang Gruber Lisbon Barnacles are basically crabs with a very ugly appearance but with the best and finest crustacean meat Bring a pot of water with 70g of sea salt and 1 bay leaf to the boil. Percebes -1 kg is enough for 4 people- put in the pot and let it boil for a few minutes. Remove from the stove immediately and just let it draw. Remove from the pot and place on a plate, barnacles are cooked only very briefly. After cleaning, put the crabs in boiling salted water with a bay leaf in it. As soon as the water boils again, take it off the flame and let it steep for a moment. Usually barnacles are eaten without a side dish – simply break the stem off the stone with your hands, twist off your feet and pull out the meat. Some connoisseurs prefer to suck out the meat.
