Basic recipe for the most delicious sugar-free muffins

Ingredients for 3 servings:

  • 85 g oat flakes
  • 1 large apple
  • 65 g raisins
  • 1 tbsp, heaped coconut oil
  • 1 tsp baking powder

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 175°C (fan/convection oven). Cut the apple into pieces, combine all ingredients except the baking powder in a bowl, and blend with a hand blender until smooth. You can now add blueberries or other fruits, depending on your taste. Finally, fold the baking powder into the batter and fill the muffin tins. I made enough batter for six muffins. The muffins are baked for 15-20 minutes, depending on the desired degree of browning, and then should rest in the tin for a while. They taste best warm! The muffins are wonderfully fluffy and have a very pleasant sweetness. If you like them a little sweeter, you can add one or two soft dates (e.g., Medjool or Zamli). If you like, you can add an egg to the batter. However, this isn’t necessary for the consistency—the muffins will hold together well without it. Since the recipe is sugar-free, it’s perfect for babies!
