Ingredients for 1 servings:
- 270 g flour
- 170 g sugar
- 1 packet of vanilla pudding powder
- 2 tsp baking powder
- 230 ml soy milk (soy drink) or water
- 120 ml oil, neutral

Preheat the oven to 180°C (top/bottom heat). Mix the dry ingredients, then add the milk or water and oil and mix until smooth. Now you can add more ingredients if you like. Depending on your mood, you can add chocolate sprinkles, cocoa powder, cherries, nuts, raspberries, desiccated coconut, cinnamon, orange zest, etc. There are no limits to your creativity. If the batter becomes too firm when you add dry ingredients like cocoa, perhaps add a splash of water/milk. You just have to adjust the quantities according to your taste, but it usually works out well. If you don’t want to add anything else, that’s fine too; you’ll have delicious vanilla muffins. Now divide the batter between 12 muffin cups, place in the hot oven, and bake for about 20-25 minutes. Do the toothpick test.
