Basil Chicken with Melted Tomatoes
The perfect basil chicken with melted tomatoes recipe with a picture and simple step-by-step instructions.
- 1 Clove of garlic
- 0,5 bunch Basil
- 4 Chicken fillets á approx. 150 g
- Salt pepper
- 6 tsp Olive oil
- 8 Discs Ciabatte, approx. 200 g
- 500 g Cherry tomatoes
- 1 Onion
- 2 tsp Sugar
- 2 tbsp Balsamic vinegar
- 25 g Parmesan cheese
- Peel the garlic and chop finely. Wash the basil, shake dry and cut into strips. Wash the meat, pat dry and season with salt and pepper. Heat 2 teaspoons of oil in a pan. Fry the ciabatta in it until crispy, remove. Heat 2 teaspoons of oil in the frying fat. Fry the meat on all sides over a medium heat for 10-12 minutes. Add the garlic and 2 tbsp basil just before the end of the frying time.
- Wash tomatoes and rub dry. Peel the onion, cut in half and cut into thin strips. Heat 2 teaspoons of oil in a coated pan. Sauté the onion in it for about 2 minutes. Add tomatoes and sugar and cook for about 4 minutes. Deglaze with vinegar and 150 ml water, bring to the boil and simmer for 1-2 minutes. Season well. Arrange everything on preheated plates and serve sprinkled with a Parmesan slicer.
