Basil Chicken with Melted Tomatoes

The perfect basil chicken with melted tomatoes recipe with a picture and simple step-by-step instructions.

  • 1 Clove of garlic
  • 0,5 bunch Basil
  • 4 Chicken fillets á approx. 150 g
  • Salt pepper
  • 6 tsp Olive oil
  • 8 Discs Ciabatte, approx. 200 g
  • 500 g Cherry tomatoes
  • 1 Onion
  • 2 tsp Sugar
  • 2 tbsp Balsamic vinegar
  • 25 g Parmesan cheese
  1. Peel the garlic and chop finely. Wash the basil, shake dry and cut into strips. Wash the meat, pat dry and season with salt and pepper. Heat 2 teaspoons of oil in a pan. Fry the ciabatta in it until crispy, remove. Heat 2 teaspoons of oil in the frying fat. Fry the meat on all sides over a medium heat for 10-12 minutes. Add the garlic and 2 tbsp basil just before the end of the frying time.
  2. Wash tomatoes and rub dry. Peel the onion, cut in half and cut into thin strips. Heat 2 teaspoons of oil in a coated pan. Sauté the onion in it for about 2 minutes. Add tomatoes and sugar and cook for about 4 minutes. Deglaze with vinegar and 150 ml water, bring to the boil and simmer for 1-2 minutes. Season well. Arrange everything on preheated plates and serve sprinkled with a Parmesan slicer.
  3. Add toasted ciabatta.
