Basil-mozzarella-skewers

Ingredients for 4 servings:

  • 1 cup of mozzarella (mini balls)
  • 1 tbsp basil
  • 8 cherry tomatoes
  • ¼ bell pepper(s), orange
  • ¼ cucumber(s)
  • 1 small onion(s), red
  • 2 garlic cloves
  • 1 small pepper, medium hot
  • 1 small lemon(s) (organic)
  • 1 tbsp parsley, finely chopped
  • 1 tsp oregano
  • 100 ml olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Drain the mozzarella balls well. Wash the tomatoes, remove the stems, and halve the tomatoes crosswise. Trim, deseed, and wash the bell peppers, then cut into 1 cm cubes. Wash the cucumber and cut into 8 mm thick slices, then quarter them. Thread the small mozzarella balls and the prepared ingredients alternately onto 16 wooden skewers. For the marinade, peel the red onion and garlic and finely dice them. Halve the chili peppers lengthwise. Then remove the stems, seeds, and membranes and finely chop the chili peppers. Wash the lemon in hot water and peel the zest into strips using a zester. Mix the lemon zest with the onion, garlic, chili peppers, herbs, and olive oil in a shallow dish. Lightly season the skewers with salt and pepper, and place them in the marinade. Cover and marinate for about 1 hour, turning occasionally. Drain well. Serve with fresh baguette or ciabatta.
