Ingredients for 1 servings:

  • 375 g butter, soft
  • 375 g sugar
  • 1 bag of vanilla sugar
  • 3 tbsp rum, possibly orange liqueur or amaretto
  • 3 eggs
  • 6 egg yolks
  • 225 g flour
  • 125 g cornstarch
  • 1 bag of baking powder
  • 6 egg whites
  • 1 pinch of salt
  • 1 jar jam (orange or apricot jam)
  • 1 cup of chocolate coating

Beat the softened butter, sugar, vanilla sugar, rum (orange liqueur or Amaretto), 3 whole eggs, and 6 egg yolks with a mixer until fluffy. Then beat the egg whites with a pinch of salt until stiff peaks form and fold them into the butter mixture along with the flour, cornstarch, and baking powder. Line a springform pan with baking paper and spread 2 tablespoons of batter at a time on each layer. Bake in the oven under the broiler for about 2 minutes until golden brown. Add another 2 tablespoons of batter to the already baked batter and continue until all the batter is used up. This creates the Baumkuchen look. Allow the cake to cool completely. Then warm the jam, spread it all over, and then let it cool completely. Finally, melt the chocolate coating and spread it on top. Tip: The cake tastes particularly good after it has been allowed to stand for a few days, and it keeps well.
