Ingredients for 4 servings:

  • 150 g biscuits (cantuccini)
  • 1 jar sour cherries (370g net weight), drained
  • 4 tbsp Amaretto
  • 1 lemon(s), organic, 2 tsp zest grated and squeezed
  • 250 g mascarpone
  • 250 g quark (low-fat quark)
  • 2 tbsp sugar
  • 1 vanilla sugar
  • 3 tbsp almonds, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

a creamy, quick mascarpone dessert

Divide the almond biscuits into 4 tall dessert glasses. Mix 3 tablespoons of cherry juice with 2 tablespoons of Amaretto and drizzle over the biscuits. Place the cherries on the biscuits and sprinkle with half of the chopped almonds. Combine the mascarpone, quark, lemon juice and zest, the remaining 2 tablespoons of Amaretto, sugar, and vanilla sugar to form a cream. Spread over the cherries, garnish with the remaining almonds and a few more cherries. Refrigerate for at least 30 minutes.
