Bayreuth beer soup

Ingredients for 5 servings:

  • 5 large potatoes
  • 3 bottles of beer, preferably light
  • 1 onion(s), finely diced
  • 80 g bacon, finely diced
  • 30 g butter
  • 100 ml cream
  • 500 ml homemade vegetable broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Fry the onion and 50g of bacon until crispy, then add the peeled and diced potatoes. Continue frying, then deglaze with the beer. Season with salt and pepper. Pour in the homemade vegetable stock. Bring to a boil and simmer until the potatoes are tender. Puree and season with butter and cream, then season to taste. Fry 30g of bacon until crispy and sprinkle over the soup.
