Ingredients for 4 servings:

  • 500 g mashed potatoes, from the previous day, cold
  • 1 egg(s)
  • 3 tbsp breadcrumbs
  • 3 tbsp cheese, grated (Gouda, Emmental…)
  • 1 tbsp chives, in rolls
  • Clarified butter, for frying

a tasty way to use leftover KaPü with cheese

Mix the cold mashed potatoes with the listed ingredients and let them stand for half an hour. Heat the clarified butter in a pan. Moisten your hands and use a tablespoon to cut off clementine-sized pieces and form them into cookies. Place them in the hot oil. Fry for about 10 minutes on each side until they are nicely browned. These cookies can be used like hash browns. The dough yields about 10 cookies. They’re also delicious cold.
