Meat skewers – Suvlákia

Ingredients for 4 servings:

  • 800 g lamb from the leg
  • 125 ml oil (olive oil)
  • 1 lemon(s), the juice
  • 125 ml wine, white, dry
  • Salt and pepper, black, freshly ground
  • 8 bay leaves
  • 2 tsp oregano, dried
  • 250 g shallot(s)

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Rinse and dry the meat, and cut into approximately 3 cm cubes. Mix olive oil with lemon juice, wine, salt, pepper, halved bay leaves, and 2 teaspoons of oregano. Toss the meat in the mixture. Cover and marinate overnight in a cool place, if possible. The next day, peel the shallots. Drain the meat cubes and place them on skewers with the shallots, ensuring they lie flat against each other. Insert the bay leaves between them. Place the skewers on the preheated grill and grill for 4-5 minutes on each side, depending on the thickness of the meat. Serve with rice. You can also sandwich pieces of tomato and bell pepper between the pieces of meat and grill them with the meat. This also works with pork or veal. Drinks: A strong red country wine or retsina goes perfectly with this dish.
