Ingredients for 4 servings:

  • 12 Jalapeño(s) (Chipotle peppers), dried, stems removed
  • 1 onion(s), diced
  • 3 garlic cloves, chopped
  • 700 ml water
  • 60 ml apple cider vinegar
  • 100 ml tomato paste
  • Salt
  • 475 ml vinegar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

For all meat dishes

Chipotle peppers are especially delicious when soaked in a bowl of apple cider vinegar. After a few days, they’ll be as plump as before they were dried. Alternatively, you can quickly soak them in hot water for an hour. Combine all ingredients except the distilled vinegar in a saucepan and simmer on low heat with the lid on until the mixture has reduced to about 350 ml. Purée the mixture in a blender until it reaches a paste-like consistency. Pour the mixture and vinegar into a bowl and mix well.
