Ingredients for 1 servings:

  • 5 tbsp ketchup
  • 5 tbsp BBQ sauce
  • 5 tbsp Sangrita, fiery
  • 5 tbsp maple syrup
  • 4 tbsp Worcestershire sauce
  • 3 tbsp smoked salt, less if needed
  • 2 tbsp vinegar (fig) or other fruit vinegar
  • 2 tbsp mustard seeds
  • 1 tbsp pepper, crushed
  • some garlic granules and/or Tabasco

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Combine all ingredients and bring to a boil briefly. Remove the marinade from the heat and let it cool. Once the marinade is lukewarm, massage the meat vigorously and let it soak in for at least 4 hours. This amount is enough for at least 1 kg of meat, and any leftovers can be used to coat the meat while it’s grilling. My favorite is spare ribs marinated in this way.
