Ingredients for 1 servings:

  • 140 g sea salt, coarse
  • 40 g sweet paprika powder
  • 40 g sweet paprika flakes
  • 2 tsp ginger powder
  • 20 g lemon pepper
  • 20 g orange pepper
  • 2 tsp, heaped marjoram
  • 1 handful of peppercorns, black or colored
  • 25 g pine nuts
  • 1 tsp cumin
  • 1 pinch(s) peppermint
  • 4 tsp paprika powder, hot
  • 4 tsp brown sugar
  • 4 tsp oregano
  • 1 jar tomato paste
  • 1 jar honey
  • 3 tbsp mustard, medium hot
  • 3 tbsp brown sugar
  • 2 tsp mustard powder
  • 4 cl whiskey to taste

Working time approx. 10 minutes; Total time approx. 10 minutes

I usually make my spice blends as I see fit, but today I took notes to have a record for myself. I put all the dry spices in the Thermomix and mix and grind them for 8 seconds on speed 8. I rub the resulting rub all over my ribs. This time, I used 6 loin ribs. The remaining rub then becomes the glaze for the ribs. Stir together the tomato paste, honey, the remaining sugar, mustard, and whiskey until a nice, sticky mixture forms, which is easy to brush onto the ribs later.
