Ingredients for 1 servings:

  • 250 ml ketchup
  • 130 ml honey
  • 100 ml apple juice, naturally cloudy
  • 3 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 5 tbsp soy sauce, light
  • 2 tbsp tarragon mustard or an alternative mustard
  • 5 tbsp apple cider vinegar, unfiltered
  • 2 tsp fresh ginger, grated
  • 2 tsp paprika powder, smoked, alternatively sweet
  • Salt
  • some cornstarch

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Combine all ingredients except the cornstarch in a saucepan. Place the pan on the stove and heat gently; this allows the flavors to blend. Stir everything with a whisk until smooth and bring to a boil. Simmer the sauce for about 5 minutes. Mix the cornstarch with a little cold water until smooth. Stir into the sauce while gently simmering (not all at once) and bring to the desired consistency. Caution: The sauce will thicken slightly as it cools. Adjust the spiciness with the fresh ginger. The 2 teaspoons are perfectly edible, but already quite spicy on the finish, so it’s best to experiment with the ingredients. The sauce is perfect for marinating spare ribs before baking or grilling, or as a sauce for anything grilled.
