Bean curry relish

Ingredients for 1 servings:

  • 300 g beans, green
  • 2 onions
  • 1 garlic clove(s)
  • 1 tbsp cornstarch
  • 200 ml fruit vinegar
  • 1 tsp curry
  • ½ tsp black cumin
  • ¼ tsp turmeric
  • ¼ tsp mustard seeds
  • ¼ tsp salt
  • 150 g white beans (can)
  • 225 g sugar

Working time approx. 35 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Blanch the green beans in salted water for 5 minutes, then drain. Chop the onions and garlic. Mix the cornstarch with a little fruit vinegar. Mix the remaining fruit vinegar with the curry powder, black cumin, turmeric, mustard seeds, sugar, and salt. Place everything in a saucepan and bring to a boil. Simmer for 5 minutes. Add the green and white beans. Stir in the cornstarch and simmer for about 2 minutes. Immediately pour into jars while still hot and seal. This relish tastes delicious with fish and grilled meats!
