Bean ragout with sausages

Ingredients for 4 servings:

  • 750 g green beans
  • 350 g Vienna sausages
  • 120 g onion(s)
  • 1 bunch of savory
  • 1 bunch of parsley
  • 30 g butter or margarine
  • 20 g flour
  • 150 ml whipped cream
  • 250 ml vegetable broth, instant
  • 2 tsp white wine vinegar
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Trim the beans, cut into approximately 2 cm long pieces, and boil in salted water for 6-8 minutes. Then rinse. Slice the sausages crosswise, finely dice the onions, and chop the savory and parsley separately. Sauté the onions and beans in butter or margarine. Dust with flour, add the cream and stock, and bring to a boil while stirring. Add the sausages and savory and simmer gently for 3 minutes. Season with vinegar, salt, and pepper, and stir in the parsley before serving. Serve with boiled potatoes or mashed potatoes.
