Bean salad from a jar

Ingredients for 1 servings:

  • 1 kg bush beans or runner beans
  • 1 garlic clove(s)
  • 1 onion(s)
  • 150 ml water
  • 75 ml white wine vinegar
  • 75 g sugar
  • 1 tbsp peppercorns
  • 1 bay leaf

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes

Makes approximately 5-6 jars of “cucumber” beans. Wash the beans, trim the ends, and remove any strings. Cut into bite-sized pieces. Blanch in batches in a large pot of boiling water for 3 minutes. Remove from the water, rinse with cold water, and drain well. Peel the garlic clove and onion and thinly slice. Place the water in a pot with the vinegar, sugar, peppercorns, bay leaf, garlic, and onion slices; cover and simmer for 10 minutes. Layer the beans in the prepared jars. Top with the vinegar and onion infusion. Simmer at 100°C for 60 minutes. When serving, season with a little oil and freshly diced onion.
