Bean soup with meatballs à la Mama

Ingredients for 4 servings:

  • 500 g minced meat
  • 2 onions
  • 1 can of tomatoes, chopped, approx. 400 g
  • 200 g green beans, frozen
  • 500 ml vegetable stock
  • n. B. savory
  • salt and pepper
  • 3 large potatoes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Finely chop the onions. Mix one onion with the minced meat, salt, and pepper, and form the mixture into balls. Heat the oil in a deep pot and brown the meatballs all over, then remove. Brown the remaining onions in the oil. Then pour in the chopped tomatoes and about 500 ml of vegetable stock. Add the beans and savory and simmer for about 30 minutes. Peel and dice the potatoes, and cook them in a separate pot of salted water. Finally, add the potatoes to the soup and season to taste with salt, pepper, vegetable stock, and savory.
