Ingredients for 30 servings:

  • 125 g dark chocolate
  • 250 g ground almonds
  • 3 egg whites
  • 250 g sugar
  • ½ tsp cinnamon
  • 1 pinch(s) clove(s), ground
  • 1 pinch(s) cardamom, ground
  • 2 tbsp cocoa powder
  • ½ lemon(s), peel

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Total time approx. 1 day 1 hour

Chop the chocolate into small pieces. Beat the egg whites until stiff. Mix the chocolate and almonds, then fold them into the beaten egg whites along with the sugar, spices, cocoa powder, and grated lemon zest. Scoop out walnut-sized balls and press them into sugared bear paw molds. Turn them out onto a baking sheet lined with baking paper and let them dry overnight. The next day, bake in a preheated oven at 180°C (160°C fan oven) for about 15 minutes. After they have cooled, the bear paws can be decorated by dipping them in melted dark chocolate.
