Beef and Apricot Curry

The perfect beef and apricot curry recipe with a picture and simple step-by-step instructions.

  • 100 g Dried apricots
  • 1 Onion
  • 0,5 cm Fresh ginger
  • 2 tbsp Safflower oil
  • 0,5 Cinnamon stick
  • 1 tsp Chili powder
  • 0,5 tsp Ground cumin
  • 1 tbsp Tomato paste
  • 350 g Beef shoulder
  • 0,5 tsp Garam masala
  • 0,5 tsp Apple Cider Vinegar
  • 125 ml Water
  • Sugar
  1. Peel and finely chop the onion and ginger, cut the meat into pieces. Heat the oil in a roasting pan. Brown the meat, onions and ginger and apricots in it. Stir in tomato paste, cinnamon stick, chili powder, cumin and let simmer for 5 minutes. Pour in water, add garam masala, salt, sugar and vinegar and let simmer at low temperature for about 45 minutes until the meat is cooked. Add water if necessary. Remove the cinnamon stick before serving. Rice tastes very good with it.
